Are you thinking about Super Bowl Sunday yet? With only a few days left until kickoff, I’ve got you covered for a couple of my favorite easy recipes.  If cooking isn’t your thing, I also listed three really great go-to local restaurants that will cater a mean game from the #1 pizza in New Jersey and Korean fried chicken to yummy Sloppy Joe’s.

Quick, Delicious and Easy Truffle Cheese Bread
Preheat oven to 350 degrees

  • Ciabatta or large fresh baked bread (from Whole Foods, Trader Joes, etc.)
  • Truffle oil or truffle butter (truffle oil can be found @ Whole Foods, truffle butter @ the Wine Library)
  • Grated parmesan, Grana Padano and/or Asiago cheese
  • Mozzarella cheese
  • Chopped parsley

To Assemble:

  • Cut the bread in half
  • Smear room temperature truffle butter or regular butter on the bread.  If using regular butter, then drizzle truffle oil over it
  • Sprinkle the grated parmesan/grana padano/asiago over both sides
  • Sprinkle some mozzarella over this
  • Lightly shower some parsley for a bit of added flavor and color, but not too much
  • Bake in the oven until bubbling and cheesy.  For added color, you can broil for a short time but don't let it burn
  • Cut into wedges and wait for the compliments!   For additional compliments, add crumbled bacon on top prior to baking.

Tried and True Guacamole and Chips

  • 5 avocados, cut into 1/2-inch pieces
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 cup fresh cilantro, roughly chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 16-ounce bag tortilla chips

To Assemble:
In a large bowl, combine the avocados, onion, jalapeño, cilantro, lime juice, salt, and pepper. Stir well. Serve with the tortilla chips.
